Castella cakes, the latest trend in Singapore's food porn industry has got us all queuing again. I've tried to but always giving up when I'm told that I have to wait for another 2 hours for these yummy delicacies, but thankfully a new branch of Ah Mah Homemade Cake has finally opened in Orchard Road, Dhoby Ghaut!
Incepted in April 2017 and originating from Malaysia, Ah Mah Homemade Cake has already sold 100,000 boxes of its castella cakes. Inspired by the ones from Tamsui, Taiwan, Chef Jim of Ah Mah has adapted the traditional recipe with a local twist.
Together with their new 6th branch opening, Ah Mah Homemade Cake has also presented their new Rocky Choc Flavour. Luscious dark chocolate generously blended into the signature Ah Mah's cake batter, topped with milk chocolate chips, this new flavour has already won my heart over with its chocolatey goodness.
Same like their Original and Cheese flavours, their egg sponge cakes are not very sweet, very soft and fluffy. I can't help myself from taking bite after bite and within a day, I can already finish half a slab!
But, I know I'm eating with lesser guilt for the cakes at Ah Mah are made with a healthier choice, purely with milk, high-quality eggs and flour; no water, preservative nor colouring is added. Just watch the video above...
Also, because of that, the cakes are best enjoyed within 3 days to ensure absolute freshness and quality of the cakes. Even the Ah Mah cakes are baked fresh daily, any unsold cake will be discarded after 12 hours!
The Original is priced at S$8, Cheese at S$11 and the Rocky Choc at S$13. To differentiate the Original from the Cheese cakes, the Original ones have the Ah Mah logo hot stamped on it, so cute right?!

Every baking session consists of 9 cakes, but the Rocky Choc Flavour is limited edition as with every batch, there might only be 1 or 2 of it, whilst the rest is the Original and Cheese flavour. Do note that everyone is only allowed 2 cakes per purchase, so anticipate the longer waiting time as this is only so far the only branch with the Rocky Choc flavour!
